Pate is pudding-like dish eaten mostly in Northern Nigeria. The main ingredient is usually either acha (fonio) or corn that has been grinded unevenly. The dish is very easy to prepare and is favorite among most Kaduna and Plateau people. The recipe varies from home to home and so you are free to play with it as you wish. Take note, however, that you don’t over-spice the dish as that would destroy the enjoyable experience it would have been. Whether it is corn or acha you intend to use, make sure you clean it properly and remove all dirt and stones.
Ingredients
Acha- 1 cup
Tomatoes- 3 pieces
Bell pepper (tatashe)- 1 piece
Small pepper- 2-3 pieces
Onion- 1 medium
Boiled and well-seasoned beef- ½ kg
Palm oil- 1 cooking spoon
Spinach- 1 bunch
Salt- to taste
Steps
Prepare and chop the onion, peppers, and tomatoes.
Put a pot on heat and pour the palm oil. Add the chopped ingredients and stir-fry for about 3 minutes.
Add the meat stock, salt, and stir.
Bring to boil while you chop the beef into preferable sizes.
Add the acha and leave for 5 minutes. The broth will begin to thicken.
Add the washed, chopped spinach. Leave for another 5 minutes then taste.
Turn off heat and serve in a bowl. Bon appetite.
The dish is very easy to prepare and may serve as an appetizer. It digests easily since it is cooked by boiling and is filling due to the fibrous content of the spinach. The meat serves as something to chew on and so makes this dish something you have to try.
